Subak-hwachae (수박화채) or watermelon punch is a variety of hwachae (punch) made with watermelon.[1] It is widely consumed in the summer throughout Korea and is a good way of keeping cool in hot temperatures.[2]
Preparation
Watermelon is cut in half and the interior flesh can be scooped out using a melon-baller or cut into small pieces with knife and the seeds to be removed.[3][1] Hollow watermelon rind may be cut decoratively and used as the serving bowl for hwachae.[1]Watermelon juice and sweeteners like sugar and honey are added; water is sometimes also added to the punch.[1] Scooped or sliced watermelon pieces, bits of other fruits, and ice cubes are added.[2] Sometimes, soju can be used in subak-hwachae.[4]
