Desi Chinese

The Indian Chinese cuisine or more commonly known as Desi Chinese is an adaptation of Chinese cooking techniques and seasoning to Indian tastes. Desi Chinese is said to have originated from a small Chinese community that lived in Kolkata. Today, Desi Chinese is an integral part of every house hold cuisine.[1] [2]

Origin

The cuisine is believed to have originated from the Chinese of Kolkata and Chinese food is still popular there. At present, the Chinese population in Kolkata stands at approximately 2,000. Most of these people are of Hakka origin and reside in the Chinatownregion of Kolkata. Chinatown still boasts a number of Chinese restaurants specialising in Hakka cuisine and Desi Chinese variants.[3]

Features

Foods tend to be flavored with spices such as cumin, coriander seeds, turmeric, etc. Hot chilli, ginger, garlic, sesame seeds, dry red chilis, black pepper corns and yogurt are also frequently used in dishes. This makes Desi Chinese food similar in taste to many ethnic Chinese dishes. [4] [5]

Availability

Currently Ching's Secret is a pioneer in Desi Chinese cuisine and is readily available across India. It is referred to as a ‘Fast Food’ and is available along the roadside dhabas. Desi Chinese made by roadside ‘thelawallas’ is loved by people of all age groups. As of 2007, Chinese cuisine ranks India's most favourite cuisine (after local food), growing at 9% annually. It is the most favoured option when young people go out to eat and the second favourite (after south Indian cuisine) when families dine out.
