Candida humilis is a species of yeast in the genus Candida. It commonly occurs in sourdough cultures, along with different species of lactic acid bacteria (e.g., Lactobacillus fermentum, Lactobacillus paralimentarius, Lactobacillus plantarum, and Lactobacillus sanfranciscensis).[3][4]
