The Elgin Hotel,[2] Darjeeling formerly known as The New Elgin[3] was built around the year 1887 and was originally the summer residence of the Maharaja (King) of Cooch Behar. It is a Heritage Hotel situated in Darjeeling, a Hill Retreat in the Himalayas.
History
Built in 1887 around a garden, the hotel has been extensively refurbished to restore it to its former grandeur and its history has been kept intact. The hotel which was styled in the Royal Manor House architecture has been restored to its original condition with etchings of Gouray Douglas,[4] lithographs of William Daniell, period Burma Teak furniture, oak floor boards and paneling and original fireplaces.
This hotel has played host to dignitaries like the US Ambassador and the Palden Thondup Namgyal, Crown Prince of Sikkim to Dominique Lapierre and Mark Tully. The hotel has stories to tell from the time of its first owner the Maharaja of Cooch Behar to Nancy Oakley when she owned it in the 1950s.

The Elgin Hotel[5] is within walking distance of the famous Darjeeling Mall and the Raj Bhavan (Governors House). There is a well stocked library, games room and children's activity center.
Cuisine
Sikkimese food like Momo - steamed dumplings with a chicken, pork or vegetable filling, accompanied with tomato chutney, Gyako Soup - hot chimney soup with noodles, eggs, chicken balls, black mushrooms, mixed vegetables, spring onions and coriander, Churpi Capsicum - cottage cheese from Yak milk & capsicum with sweet chilly, Sisnu Dal - stinking nettles and lentils, Kalo Dal - black lentils from the himalayas, Sukha Tamba - dry bamboo shoots, Ningro Tomato - wild fern and tomatoes, Iskus Dry - chayote, Saag - mustard leaf with pork or chicken, Chicken Mula - radish leaf cooked with chicken, Fing Vegetables - glass noodles with vegetables, Gundruk - Dry Spinach, Kinema - fermented soya bean seeds. To complement the food there are condiments like Mula Achar - radish pickle and drinks like Tongba - freshly fermented light alcoholic millet seed drink in hot water. The continental supper of Shepherd's Pie[6] and Roast Chicken.
