Skirlie is a Scottish dish, made from oatmeal fried with fat, onions, and seasonings. Most commonly used as the basis of white puddings, it is also served as a side-dish or used as a stuffing for chicken or other fowl. Also a common side dish to accompany mince & tatties (especially in the NE of Scotland). Lard, beef dripping or butter are used.[1]
