Cricket flour
Cricket flour also known as cricket powder and cricket protein is a substance made from ground-up crickets. The first company to use cricket flour was Chapul,[1] which launched a project on Kickstarter on 12 July 2012, to make a protein bar with the cricket flour[2] and followed up with a successful appearance on ABC's Shark Tank, partnering with Mark Cuban. A US company, All Things Bugs, manufactures and sells whole cricket powder wholesale to other small start-up companies that use it in protein bars, baked goods and other products.[3] One such startup is Exo, which successfully used Kickstarter in to 2013 to fund an initial batch of protein bars made with cricket flour.[4] The bars are now available for sale online.[5] Additionally, other companies such as Cricket Flours LLC are now selling pure cricket flour and flavoured mixes such as Peruvian Chocolate and Chocolate Peanut Butter cricket flour as well on-line.[6] Entomo Farms is the first insect farm, dedicated to farming insects specifically for human consumption in North America.[7] Entomo Farms was founded by the Goldin Brothers, Jarrod, Darren and Ryan who had 10 years of experience farming insects for the reptile trade. Entomo Farms processing facility produces various cricket flours including, but not limited to, organic and gluten free which they were the first to innovate. Entomo Farms is a primary producer and processor of cricket flour and therefore sells their flour internationally. With customers from North America to Japan and from Europe to New Zealand, Entomo Farms is instrumental in helping to fill a growing demand for cricket flour around the world, prioritizing quality, access and affordability.
