Pol Sambola (Coconut Sambol)

Pol Sambola
Pol Sambola (coconut sambol) is a traditional Sri Lankan dish made from coconut.
Ingredients
- Coconut
- Red Onion
- Ground Dry Red Chillies
- Salt
- Lime
- Pepper
- Maldive Fish
- Garlic (Optional)
- Tomato (Optional)
Preparation
Grate the coconut finely by using a coconut scraper. (If using unsweetened desiccated coconut, allow it to soak in warm water for a few minutes and squeeze out the water). Using mortar and pestle, crush dry red chilies, salt, Maldives fish chips (optional) and onions until it is all mashed together. Finally add the coconut and grind until the coconut becomes orange in color. Empty into a bowl and mix in some lime juice.[1]
Serving
Mostly using as an accompaniment with Rice, String Hoppers, Hoppers, and many more meals.
