Khanom chan
Khanom Chan (Thai: ขนมชั้น, pronounced [kʰānǒm t͡ɕʰán]) is one of the ancient Thai desserts, which Thai ancestors usually made for auspicious ceremonies. In Thai, the word “Khanom” (Thai: ขนม) means dessert, “Chan” (Thai: ชั้น) means layer. It is usually baked in the complete 9 layer form. The number nine itself has connotations of prosperity in Thai culture (in Thai, 'nine' also sounds like ‘progress’). Khanom Chan therefore represents prosperity in life and promotion in your occupation.
Khanom Chan is frangrant, subtly sweet and slightly oily from the addition of coconut milk. The texture is smooth yet sticky.[1]
Ingredients
There are 4 main elements.[2]
- Flour: There are 3 types of flour that usually used.
- rice flour, this will make the texture of dessert harden and stable.
- tapioca flour, this will make the delicate, soft, sticky, clear, and glitter texture.
- arrowroot flour (Ground Arrowroot), this will make smooth, sticky and harden and clear. The tapioca flour makes a clearer texture than arrowroot flour.
- Sugar
- Coconut milk
- Colouring: Embellish color in Thai dessert is mostly come from nature by decoction process.[3]
- The green color is made of pandanus leaves.
- The blue color is made of butterfly pea flower.
- The purple color is made of butterfly pea flower mixed with a few drop of lime juice.
- The red color is made of Roselle (plant) or lac.
- The yellow color is made of turmeric.
All the colors are come from the natural component which is herbs. It will make the dessert have herbal fragrant and more nutrition.
