Grimaldi's Pizzeria

"Grimaldi's Pizzeria" aka “Grimaldi’s” and “Grimaldi’s Coal Brick-Oven Pizzeria” is an American pizzeria chain with its origins in New York. Grimaldi’s Pizzeria has operated as a pizzeria restaurant for over thirty years. It is famous for its use of coal brick-ovens, sale of whole pies (as opposed to slices), select menu offerings, and affiliation with the Brooklyn Bridge. The most well-known restaurant is located in Brooklyn, New York “under the Brooklyn Bridge." There are approximately forty Grimaldi’s Pizzeria restaurants operating in the United States in over ten states.[1]

History

Patsy Grimaldi, the founder of Grimaldi's Pizzeria, learned to make pizza at his uncle Patsy Lancieri's pizzeria in Italian Harlem in 1941 at age ten. He eventually opened his own restaurant in Brooklyn. Grimaldi originally planned to build it in Manhattan. However, he believed that coal-fired brick ovens produced the best pizza and that it was illegal to build new coal ovens in Manhattan. As a result, he moved the restaurant to Brooklyn. Grimaldi sold his interest in the restaurant in 1998. At various times during the restaurant’s history it operated as and/or was known as “Patsy’s Pizzeria” or “Patsy Grimaldi’s.” The restaurant now operates under the names “Grimaldi’s Pizzeria”, “Grimaldi’s”, and “Grimaldi’s Coal-Brick-Oven Pizzeria.”
