Pierre is a French cuisine restaurant situated on the 25th floor of the Mandarin Oriental hotel in Hong Kong which opened in October 2006 after a major renovation to the hotel. It is owned by Chef Pierre Gagnaire. It replaced Vong's (1997-2005), which replaced Pierrot (1979-1997), a classic French Restaurant.

signature dishes include:

  • Roasted Free Range Guinea Fowl in two ways: The Breast stuffed with Almond and Pistachio Paste "Jus de Cuisson" with Spinach, Mornay Tuile "Caillette", Red Cabbage and Fondante Potato
  • Celeriac and horseradish mousseline; red ice cream and jelly; prawn medaillion
  • Roasted sweetbread with ginger, melted cabbage; bitter cream sauce
  • Marinated fillet of lamb with vadouvan. Red cabbage jam with red currant. Quince paste

Recognitions

The restaurant received one star in the Michelin Guide's inaugural 2009 Hong Kong and Macau edition.[1]
