Jorge Diaz (born November 15, 1973 in New York, New York) is a former American football offensive tackle in the National Football League. Born in New York, he grew up in Katy, Texas, playing football for noted Texas powerhouse, Katy High School. Following two years at Kilgore Junior College, he played his remaining college football at Texas A&M-Kingsville.
In 1996, he was signed by the Tampa Bay Buccaneers as an undrafted free agent, playing for them until 1999. He also played one year for the Dallas Cowboys in the 2000-2001 season.
Currently, he is a restaurant manager at Ocean Prime in Tampa, Florida.
