Józef Zapędzki (born March 11, 1929) is a Polish sport shooter, twice a gold medalist at the Olympic Games in 25 m Rapid Fire Pistol, at the (1968 Mexico City and at 1972 Munich). He is one of three shooters to have successfully defended men's 25 m Rapid Fire Pistol at the Olympic Games.
He was born in Kazimierówka, near Zawiercie.
