The company was established in 1997 in a bookstore in Galway and expanded over four years with the addition of five outlets in the Dublin metropolitan area. In 2002, the Company merged with the Bendini & Shaw sandwich chain, allowing for the brand to provide a wider variety of sandwiches and cakes. In addition the company has a large number of self-service units in operation.

They identified the brand as one of the fastest growing brands in the café sector in Europe.[3] In December 2010, Penninin sold their interests in the company which is now owned equally by Dragons' Den panel member Bobby Kerr, Harry O’Kelly (CEO) and John Clohisey (SPAR/BWG).
