Waterloo is a semi-soft, off-white British cheese originating from the Duke of Wellington's estate.[1] It is produced by Village Maid Cheese in Riseley, Berkshire.[2]
Similar to brie,[3] the cheese is made from full-fat, unpasteurised Guernsey milk.[4][5] The affinage period is between 4 and 10 weeks, and the cheese has a fat content of 45%.[6]
