Poduthol

Poduthol is a South Indian North Malabar side dish. This is avery famous and used on daily basis in all the families irrespective of religion in this region. This is generally cooked to have with cooked rice during lunch and dinner. This is an unavoidable part of the feast during wedding and other ceremonies.[1][2]

Method of Cooking

Poduthol is bit dry item generally cooked after finely chopping vegetable viz. Cabbage, beans, unripe jackfruit, carrot, unripe banana, yardlong bean, bittergourd (കയ്‌പക്ക), whitespot giant arum, leaves such as green or red cheera (ചീര), Moringa oleifera, Ipomoea aquatica, Sesbania grandiflora etc. These finely chopped leaves or vegetable can be mixed-up with turmeric powder, Chilly powder, sliced onion and grated coconut. All this to be put in a hot pan and stirred until get fully cooked.[3]. After cooking until required level, curry leaves and mustard fried in coconut oil to be poured over it along with 4-5 cloves of garlic.
