Crispers was founded in South Lakeland, Florida in 1989 by Bill Whitaker and his wife, Vanessa. The company was later sold to Publix Supermarkets Inc., the nation's eighth largest private company. On May 10, 2011, Publix announced they had reached an agreement to sell Crispers to Healthy Food Concepts, LLC and the deal was completed in July 2011.
As of 2011, Crispers has 29 restaurants throughout Florida residing in Bradenton, Clermont, Eustis, Fort Myers, Gainesville, Jacksonville, Lake Mary, Lakeland, Naples, Ocala, Orlando, St. Augustine, Tallahassee, Tampa, The Villages, Vero Beach, Viera (Melbourne), Winter Haven, and Winter Park.
