Butterkase, meaning "buttery cheese" in German, is a semi-soft cheese, moderately popular in Germanic Europe, and occasionally seen throughout the rest of the cheese-eating world.
Butterkase has, as the name suggests, a buttery, light flavor. Its texture is very smooth, akin to provolone. It is unusual, among cow's milk cheeses, for only being aged one month. It is good for foods with mild flavor, and for melting.
