Ariselu (Telugu: అరిసెలు) or Arisa (Oriya: ଆରିସା) is a South Indian sweet dish from the North-eastern part of old Madras Presidency and present day Andhra Pradesh and Orissa. Arisa or Arisalu is a Telugu word which means rice. It is also called kajaya in Kannada. A similar sweet in Tamil Nadu called adhirasam is prepared for pujas.
It is a traditional dish and is prepared during festivals like Sankranti, etc.
It is made from rice flour, ghee and jaggery or Bellamu in Telugu. Jaggery may be replaced with granulated sugar.
The dough is kneaded in a similar way to poori or chapatti. The flattened rice chapatti or poori is deep-fried in oil.
