[edit] The Vision

The World Gourmet Summit has successfully branded Singapore as the choice gourmet destination of the region[citation needed], where diners can be assured of premium, quality offerings in the local food and beverage industry. With the leading hotel establishments and independent restaurants participating on the same platform as the international stars, the Summit proves that home-grown / local talents are every bit as capable as their overseas counterparts.[neutrality disputed]

[edit] Chefs

Each year, renowned chefs from around the world are invited to participate in the World Gourmet Summit held in Singapore. These chefs showcase their culinary prowess to the local community and the gourmands here in turn, are being treated to a culinary feast.

The chef personalities would normally consist of an Iconic Chef, several Masterchefs and Guest Chefs. Each of them will present different culinary experiences ranging from dedicated dinners to special promotions held in conjunction with the hosting Establishments.

Iconic Chefs
The Iconic Chef serves as the gourmet highlight of WGS. Usually a personality of three Michelin-stars (and equivalent), the chef will conduct a culinary masterclass as well as a dedicated dinner event where his signature cuisines are presented.

Past Iconic Chefs had included Alain Passard (WGS2005), Philippe Legendre (WGS2006), Santi Santamaría (WGS2006) and Heinz Winkler (WGS2007).

Masterchefs
Guests at WGS get to savour the cuisine of the highly decorated and reputable Masterchefs who, together with the Hosting Establishment's restaurant, create a special WGS menu termed, Epicurean Delights. Served when the Masterchef is present at the restaurant, the week-long promotion features the signature dishes of the respective Masterchefs.

These Masterchefs also participate in Culinary Workshops where they demonstrate a couple of their trademark cuisine. Participants are presented with the opportunity to get up close and personal with these culinary masters and glean from them, their secrets to creating delicious food.

[edit] Winemakers

WGS is not only a celebration of fine cuisine, but also of great wines. Each year, internationally renowned winemakers from the various wine producing regions such as Bordeaux, Burgundy, Tuscany, Pomerol, Spain and Australia are welcomed to Singapore where some of their finest vintages are showcased to the local community.

The winemakers will conduct a vertical tasting of their prized pours as well as pair some of their best vintages at specially paired dinners assigned to some of the visiting Masterchefs.

[edit] Hosting Establishments

During the period of the Summit, local hotels will play host to the visiting Masterchefs. The hotels, known as the Hosting Establishments work closely with the Masterchefs in coordinating the menus and supporting the chef in the different events like the culinary classes.[citation needed]

The week long promotion (Epicurean Delights) of the Masterchef will be hosted at the Hosting Restaurant of the establishment where the entire kitchen brigade of the hosting establishment assists the Masterchef in his/her daily preparations.

[edit] Partner Restaurants

Partner Restaurants, a recent promotion created in celebration of the tenth anniversary of the World Gourmet Summit in 2006 showcases some of the finest restaurants in Singapore.[neutrality disputed]These restaurants which are mostly independent restaurants, take part in a week-long promotion where the resident chef creates a special WGS Menu to commemorate the Summit.

Additionally, each Partner Restaurant will host a one day special activity. This activity can range from a cooking demonstration to a gourmet breakfast to a themed dinner. Through the special activities, the chefs are given the opportunity to push their boundaries, and to be as creative as they want to be.

[edit] Awards of Excellence

The Awards of Excellence is Singapore's only food and beverage (F&B) award.[citation needed] It is held in conjunction with the World Gourmet Summit.

Since the inaugural Awards of Excellence (AOE) conducted in 2001, where the food and beverage (F&B) industry paid homage to some of the fines talents and rising stars of the community, the AOE has grown to become the most coveted industry award in Singapore.[neutrality disputed]

The AOE recognises the ongoing efforts of industry players from the front-end service personnel to the back-end chefs who toil endlessly to raise the bars within the industry. It is also a nod to the food and wine journalists whose critiques help shape the F&B landscape. The joint efforts of these parties position Singapore as a gastronomic hub in the region.

Each year, awards will be given out to honour the best of the industry in Singapore and the region. Through three rounds of rigorous selection by jurors comprising consumers and industry peers, the deserving few will be revealed at the WGS Awards Luncheon.

Additionally, three scholarships are awarded to aspiring talents who possess the potential to excel in their respective fields. Scholars will attend bond-free courses or apprenticeships at renowned establishments like the Torres Winery, the Johnson & Wales University and Cacao Barry Chocolate Academy.
