Wellington Brewery

Wellington Brewery, Canada's oldest independently owned microbrewery[1], is located in Guelph, Ontario. The brewery was established in 1985 and is the first North American brewery in modern times to brew cask-conditioned Real Ale.[2]
The Wellington beer is brewed in small batches with natural ingredients and uses no cold filtration, natural carbonation, no pasteurization, and secondary fermentation in casks.[3] The brewery's architecture is an homage to the traditional Oast house, the farm building used for drying hops in preparation for the brewing process[4]
