Vienna sausage

Vienna sausage is a variety of canned sausage.[citation needed] The term means essentially the same thing as Wiener, as the word "Wiener" means "Viennese" in German. Canned Vienna sausages are generally made using a simplified adaptation of the process used to mass-produce other sausages. Meats, such as chicken, beef, and pork, are finely ground and mixed with salt and spices, especially mustard, and formed into a paste, which is poured into a long casing and smoked. The sausages are cooked, the casings may be removed, then the sausages are chopped into equal size segments, and placed into tins or jars with broth or brine added for final processing the same as other canned goods.
One of the most popular brands of Vienna sausage in the United States is produced by Hormel Foods. Other manufacturers include Libby's (as pictured) and Armour. In Canada, the most popular Vienna sausage is produced by Maple Leaf Foods.[citation needed]
Vienna sausages also come in different flavors, such as barbecued vienna sausages.
In Austria a Vienna sausage, is not necessarily canned and can be bought fresh (pre cooked/smoked) from super markets and delicatessens. It is common for Vienna sausages in Austria to be smoked and to sell in skins. The smoked flavour of Viennas in Austria is probably the main feature that differentiates Viennas from plain old franks/frankfurters. Skinless and canned or retort packaged Viennas are also available but are probably less popular than fresh, again these are generally smoked or smoke flavoured, unlike other tinned or retort packaged sausages such as franks.
