I never see Ube in smoothees at non-filipino restraunts. Its always taro. Why is this?

This is because Ube is a very different type of food that is uncommon in the west. These "non-filipino" restaurants have not been welcomely introduced because of its diversity. It may be the fact of cultural racism or difference that it is not used.
