The Italian Culinary Academy, sister school of The French Culinary Institute, is located, along with the FCI at The International Culinary Center in Soho, New York. The Academy offers a unique curriculum in Italian cuisine. The benchmark course of this new school is The Italian Culinary Experience, a groundbreaking, immersive course in Italian cuisine and culture which includes training at ALMA (the International School of Italian Cuisine) in Parma, Italy, as well as an apprenticeship at a noted Italian restaurant (also located in Italy). Language training is conducted in tandem with culinary training. Students will gain conversational Italian skills with special emphasis on the words and ideas that will be of service in a busy Italian kitchen.
Chef Cesare Casella was appointed its first dean of Italian Studies, designing and writing the extensive curriculum. He will continue to oversee the comprehensive training of all chefs and instructors involved.
A la carte courses in the essentials of Italian cooking are also available for both career as well as amateur chefs.
