Summit Township is one of eighteen townships in Callaway County, Missouri, USA. As of the 2000 census, its population was 7,971.

Summit Township covers an area of 60.22 square miles and contains one incorporated settlement, Holts Summit. It contains seven cemeteries: Bull, Harthill, Link, Meng, Mount Vernon, Stokes and Wallace.

The streams of Cedar Creek, Clifton Creek, Niemans Creek and Turkey Creek run through this township.
