"a silicon mat" - are you sure this is correct? silicone sounds more likely.

Agreed-- I've changed it. A quick Google search turns up numerous examples of Silpat mats being used for pulled sugar production. Also, the use of pure silicon in cooking is unheard of. Oskay 18:50, 13 September 2007 (UTC)

I would like to suggest that it might be appropriate to add a link in the article to CandyFab, possibly along with a sentence about new and/or experimental sugar sculpture methods. (For reasons of conflict of interest, I am proposing this here on the Talk page.) Oskay 19:01, 13 September 2007 (UTC)
