Monosodium citrate has the formula NaH2(C3H5O(COO)3).

Disodium citrate has the formula Na2H(C3H5O(COO)3). It is used as an antioxidant in food as well as to improve the effects of other antioxidants. It is also used as an acidity regulator and sequestrant.

Typical products include gelatin products, jam, sweets, ice cream, carbonated beverages, milk powder, wine, processed cheeses.

Trisodium citrate has the chemical formula of Na3C6H5O7. It possesses a saline, or mildly tart, flavor. Trisodium citrate is chiefly used as a food additive, usually for flavor or as a preservative. Trisodium citrate is employed as a flavoring agent in certain varieties of club soda.
