[edit] Which primal cut?

according to organic ranchers niman ranch a skirt steak actually comes from the chuck region which corresponds roughly to the shoulder region. this was against everything I had heard previously but thought that they should actually be an expert on this topic - can we get some sources to verify the information one way or the other ? here is the niman link [1] —Preceding unsigned comment added by 151.202.9.106 (talk • contribs)

It looks like the name "skirt steak" can refer to several different cuts, although the most common in the U.S. is the cut from the plate primal. This is what Hormel Meats [2] says, as well as the NAMP cited in the article (referred to in The Field Guide to Meat by Aliza Green, a reference book). Hormel also mentions that in Britain, the skirt steak is a cut from the flank primal. I'll add these, and the sources, to the article, which was on my list of things to work on in any case.
