Russula xerampelina, also known as the Shrimp mushroom, is a basidiomycete mushroom of the genus Russula.

Mature specimens have a characteristic odour of boiled crustacean. The taste is mild. The cap is 6–12 cm wide, domed, flat, or with a slightly depressed centre, sticky. Colour purple to wine-red, darker towards the centre of the cap. Sporeprint creamy-yellow. Grows under fir or, more rarely, pine trees. Gills have a mild to rather bitter taste, narrowly spaced, and turn creamy-yellow on ageing specimens. Stipe 4–8 cm long, 1.5–3 cm wide, cylindrical, white or sometimes somewhat reddish or brownish.
