Russian candy or Russian chocolate (Finnish: kinuski; Russian: karofka) is a very sweet toffee-like dessert made by carefully heating equal amount of cream and sugar. It is traditional food in Nordic countries. Karl Fazer brought first Russian candy recipe to Finland from St. Petersburg. It's a popular treat in Russia and Europe.

Measure equal amount (for example 2 dl) of cream and sugar in small microwave safe bowl. Watch carefully while heating with full power. Once in a minute mix it with a spoon and put it back. If it starts to come over the bowl edges, take it out to cool down for a while. After few minutes it turns to smooth but thick caramel that sticks to the spoon. Let it cool down in freezer on small plates.
