Raita

Raita has several meanings:

Raita is an Indian/Pakistani cuisine term which means a yogurt relish made of Kefir-like cultured milk mixed with spices, herbs and vegetables.

This condiment tends to act as a cooling/balancing factor when main courses are hot and spicy. Biryani, Korma, Shami Kebab are some of the main dishes it complements well.

From Ayurvedic medicine point of view as well, since yogurt has a cool and wet temperament, it is advised to be part of the menu where lots of hot and dry tempered dishes are served.

Simplest form of Raita can be a combination of yogurt, Cumin powder, salt, fresh chopped mint leaves and chopped green chilies or yogurt, salt and finely chopped onions.
