Novy Svet is a Sparkling Wine from the Crimea.

Novy Svet sparkling wines are made by the traditional champagne method, hand riddled by one person and bottle fermented for three years. Each vintage is produced solely from each particular year’s harvest.

Established by Prince L Golitzin in 1878 (often referenced in Russian Language as Prince Golitsyn). The Novy Svet winery has a wonderful story dating back to the late 1800s. Prince Lev Golitsin, a member of Russia’s aristocracy, graduated from the school of classic wine making in France. He acquired the area known as Novy Svet on the sun drenched southern coast of Crimea, on the same latitude as Southern France and so the climate was perfect for growing the highest quality organic grapes. After building 3 km of cellars and planting the finest quality Chardonnay, Riesling, Pinot Meunier and Pinot Noir vines, he spent ten years refining his creation with the traditional method of bottle fermenting for three years at a constant temperature of 15C.
In 1896, his Sparkling wines were served at the coronation of the last Tsar, Nicholas II.[1] That same year, Prince Golitsyn used the right to display the family Coat of Arms on his Wines. His creation finally became famous to the world when it won a Grand Prix at the World Exhibition in Paris in 1900.[1]
The story goes that at the dinner in honour of the head of the expert commission, Count Chandon, said raising his glass:
“For the perfect quality of the wine we drink now, we owe first of all to all those employees who worked and work at our firm for more than 100 years.”
Prince Golitsyn responded to this:
The Tradition has been taken up by his great great nephew Prince Gregoriy Galitzine who has established with the help of his wife Svetlana a champagne Brand called 'Princess Galitzine' sourced from France. The first wine launched named in honour of their daughter is a Blanc de Blancs 'Cuvee Maria'This wine has won two silver medals at 2005/6 London International Wine competition
