Noma (restaurant)

Noma is a gourmet restaurant in Copenhagen, Denmark. The chef and owner is René Redzepi, who formerly worked at the restaurants The French Laundry, El Bulli and Jardin des Sens. The name originates from the two Nordic words "Nordisk" (nordic) and "Mad" (food).

The restaurant was voted 10th best in the world in Restaurant (magazine) Top 50 2008. Noma currently has two stars in the Michelin Guide. Noma is currently the only restaurant in Denmark with two Michelin stars.

The cuisine of Noma is Nordic/Scandinavian, but as Scandinavia has no real common cuisine, Noma and its founders, René Redzepi and Claus Meyer has been a driver in defining exactly what Nordic cuisine is all about. So the cuisine of Noma is to be considered more an interpretation of Nordic food, than as classical Nordic food itself, according to Claus Meyer in the book Noma - Nordic Cuisine.

Noma was opened by Rene Redzepi and business partner Claus Meyer in 2004 and is situated at Christians Brygge alongside the harbor of Copenhagen. Partners are now René Redzepi, Claus Meyer and sommelier Pontus Eluffson from Sweden.

Interior design is done by Signe Bindslev-Henriksen.
