Naryn (soup)
From Wikipedia, the free encyclopedia
Naryn or Norin (Uzb/rus Норин) is an Uzbek pasta dish made of shredded home made pasta and horse meat and served cold. It is not a soup.
[edit] Preparation
Homemade pasta is rolled very thinly and strips 1-2 mm wide and 50-70mm long are cut and cooked. They are often cooked in a broth of horse meat[1].
Horse meat or beef is then shredded into the pasta and served on a lagan (12" plate) decorated with horse meat sausage slices.
The dish is served as a part of any extended meal after the Samsa and before the Osh.
