Mixian

Mixian Chinese: 米线; Pinyin: mǐxiàn) is a type of rice noodle from the Yunnan Province of China. It is made from ordinary non-glutinous rice, and it is generally sold fresh rather than dried.
It is served in various ways, one famous one being guoqiao mixian (过桥米线; pinyin: guòqiáo mǐxiàn; literally "across the bridge rice noodles"), which is generally considered to be Yunnan's most famous dish.
