Mathieu Garon (born January 9, 1978 in Chandler, Quebec) is a professional Canadian ice hockey goaltender for the Edmonton Oilers of the National Hockey League. Before the Oilers, he saw action with the Montreal Canadiens and Los Angeles Kings.

He was drafted by the Montreal Canadiens in the second round (44 overall) of the 1996 NHL Entry Draft. He subsequently played for the Victoriaville Tigres of the QMJHL and the Fredericton Canadiens, Quebec Citadelles, Hamilton Bulldogs, and Manchester Monarchs of the AHL.

Garon did see action with the Canadiens before being traded in 2004 with a 3rd round pick to the Los Angeles Kings for Radek Bonk and Cristobal Huet. He became a restricted free agent during the 2006 off-season and on July 17, 2006, accepted a one-year, $1.216 million qualifying offer from the Kings.

Following the 2006–2007 season, Garon became an unrestricted free agent and on July 3 signed a two-year, $2.2 million contract with the Edmonton Oilers. As a result of his low goals against average, high save percentage and four shutouts in the 2007–2008 season, he essentially replaced Dwayne Roloson as Edmonton's starting goaltender. Upon suffering an ankle injury late in the season, Roloson took over once again.

Garon was the top shootout goalie in the NHL in the 2007–2008 season, having stopped 30 of 32 attempts for a perfect 10–0 in shootouts.
