Marron glacé

A marron glacé (plural marrons glacés) is a confection consisting of a chestnut candied in sugar syrup and glazed.

Marrons glacés are said to have been created in the 16th century in Lyon or Cuneo [1]; the earliest citation in French is from 1690.[2]

In 1882, Clément Faugier opened the first factory producing them industrially in Privas, Ardèche; three years later, he introduced crème de marrons de l'Ardèche, sweetened chestnut purée, made from chestnuts broken during the production process.[3]

Marrons glacés may be eaten on their own or used to garnish or sauce various desserts.
