Lewisville is a city in Jefferson County, Idaho, United States. The population was 467 at the 2000 census. It is the home of Idahoan Foods, makers of instant mashed potatoes.
Lewisville is part of the Idaho Falls, Idaho Metropolitan Statistical Area.

Lewisville was established in 1882. For the city's important role in Idaho's potato industry, Governor Butch Otter proclaimed August 11, 2007 "Lewisville Day" statewide.[1]

As of December 6, 2007, the mayor of Lewisville is Mayor Blair; two of the councilmen are Doug Walker and Robert Evans; and the city clerk is Tom Skinner. They meet evey second Tuesday of each month, at the library, at 7:30 PM.[citation needed]

As of the census[3] of 2000, there were 467 people, 150 households, and 127 families residing in the city. The population density was 743.3 people per square mile (286.2/km²). There were 162 housing units at an average density of 257.8/sq mi (99.3/km²). The racial makeup of the city was 86.94% White, 0.43% African American, 0.86% Native American, 10.49% from other races, and 1.28% from two or more races. Hispanic or Latino of any race were 12.63% of the population.
There were 150 households out of which 35.3% had children under the age of 18 living with them, 75.3% were married couples living together, 8.0% had a female householder with no husband present, and 15.3% were non-families. 12.0% of all households were made up of individuals and 6.7% had someone living alone who was 65 years of age or older. The average household size was 3.11 and the average family size was 3.43.
In the city the population was spread out with 29.8% under the age of 18, 11.8% from 18 to 24, 23.1% from 25 to 44, 25.3% from 45 to 64, and 10.1% who were 65 years of age or older. The median age was 34 years. For every 100 females there were 105.7 males. For every 100 females age 18 and over, there were 102.5 males.
The median income for a household in the city was $49,135, and the median income for a family was $49,519. Males had a median income of $29,167 versus $21,528 for females. The per capita income for the city was $13,443. About 9.6% of families and 7.5% of the population were below the poverty line, including 10.8% of those under age 18 and none of those age 65 or over.
