Kosambari

Kosambari or Koshambari is salad made from lentils and seasoned with mustard seeds. The lentils generally used are split bengal gram (kadale bele in Kannada) and split black gram (Uddina bele in Kannada). These salads are sometimes eaten as snacks, but usually as a part of full course meal in Udupi cuisine.

Ingredients required:-
- Split gram ( Bengal gram or Split Mung bean (Moong dal) )
- Mustard seeds
- Table salt
- Coconut oil
- Red Chili ( dried )
- Grated Coconut
- Coriander leaves ( chopped finely)

Soak split gram in water for about two hours. Drain water and keep split gram in a utensil. Now take some coconut oil in frying pan and keep it on flame or heat source.Add mustard seeds and red chilli to it. Heat the mix till mustard seeds starts rattling. Remove pan from flame or heat source and pour it into utensil containing split gram . Add table salt to favour and stir thoroughly.Garnish with grated coconut and chopped coriander leaves. The Kosambari is now ready to eat.
