Jimboy's Tacos

Jimboy's Tacos is a Sacramento based Mexican style fast food chain, started in 1954 by a couple named Jim and Margaret Knudsen.

In 1951, Grass Valley, California restaurant owners Jim and Margaret Knudsen[1] visited a friend's house for dinner. They were served tacos, their first time eating this food, and having experience in the food service business, they thought that the taco was food everyone would love. Jim soon after started experimenting with the taco. In 1954, Jim was ready to market the taco, and turned a trailer into a mobile taco stand in King's Beach, Lake Tahoe.[2]
By 1955, Jim and Margaret had a new, larger trailer in South Lake Tahoe. In a few years, they had enough business to open a stand in Sacramento. At this time, they started licensing franchises in limited numbers. The first Jimboy's Taco shop opened in Sacramento in 1959.[3]

Jimboy's uses fresh ingredients, which are prepared each morning. Most of the items on their menu have a corn tortilla with cheese and meat, with parmesan cheese sprinkled on the outside. Most meals come with Spanish rice and refried beans. Jimboys also offers vegetarian items.
