Jersey Mike's Subs is a submarine sandwich, or "sub", chain headquartered in Manasquan, New Jersey. The Jersey Mike's franchise has over three hundred stores across the United States. In the U.S. subs are known by several regional names, including hoagies, grinders, and hero sandwiches.

At age 14 Peter Cancro of Point Pleasant, New Jersey took a job at Mike's, a neighborhood sandwich shop founded in 1956 and then on its third owner. When the shop went up for sale once again in 1975, Cancro's mother suggested he buy it. With help from a high school football coach who was also a banker, Cancro, then 17 and a high school senior, managed to pull together $125,000 in three days. Today Cancro is the owner and CEO of Jersey Mike's Subs, with over 300 stores nationwide.[1]

Like the original Mike's store in 1956, each Jersey Mike's Subs serves authentic submarine sandwiches made to order, slicing the meats and cheeses as needed, the same way sandwiches are made in a local delicatessen.

Prospective store managers are sent to Point Pleasant, NJ for a 6 to 8 week intensive training course on how to manage a store, slice meat, among other courses.[2]

The use of traditional ingredients is emphasized, as is customer involvement in choosing the sub's dressing and condiments. The sub-making operation is usually set up in a four person assembly line fashion, greatly speeding up the building of a made-to-order sub. The meats and cheeses are sliced and placed on the roll, which is handed off to the "sprinkler", who adds oil, vinegar and other add-ons and then slides it to the wrapper, who wraps the finished sub in waxed paper (aluminum foil for hot subs) and puts it in a paper bag to be rung up by the cashier.

There are three types of rolls to choose from: Mini (about four inches), Regular (seven inches), and Giant (14 inches). Subs are numbered, and many are named as well. In 2006 the menu was updated with several new subs.

There are a number of signature wraps available on either flour or tomato basil tortillas:
- Chicken Caesar -- Grilled sliced chicken breast with lettuce, parmesan cheese and creamy caesar dressing
- Buffalo Chicken -- Grilled sliced chicken breast smothered in a spicy buffalo sauce with lettuce, tomato and blue cheese dressing
- Baja Chicken -- Grilled sliced chicken breast, melted provolone, salsa, lettuce and jalapeƱo peppers
- Grilled Veggie -- Grilled peppers and onions, melted Swiss and provolone, lettuce, tomato and homestyle ranch dressing
- Turkey Wrap -- Oven roasted 99% fat free turkey, lettuce, tomato and honey mustard sauce

Any of the regular subs can also be created as a wrap.
A variety of soups and salads are also available.

Number 12 sub is "the Cancro" which consists of roast beef and pepperoni.

  • The Chipotle Cheese Steak's sub number is a reference to Peter Cancro's jersey number from his High School's football team.
  • The Big Kahuna Cheese Steak's sub number is a reference to the year Jersey Mike's was founded: 1956.
