Israeli salad is a chopped salad of diced tomato and cucumber. It is usually dressed with fresh lemon juice and olive oil. Parsley and spring onions are sometimes added, but not lettuce. Generally, the cucumbers are not peeled. The key is using very fresh vegetables and chopping them as finely as possible.[1]

Israeli salad is served in a pita with falafel or as an independent side dish. It was part of the traditional Israeli breakfast before Western-style breakfast cereals became popular, and remains a standard feature at buffet breakfasts at Israeli hotels. In Israel, it is often referred to as "salat aravi" (Arab salad).[2]

Israeli salad is similar to other chopped salads found in the Middle East, such as Persian Salad-e Shirazi, which usually contains mint, and Turkish Choban salad.
