Interlaken is a census-designated place (CDP) in Santa Cruz County, California, United States. The population was 7,328 at the 2000 census.

Interlaken is located at 36°57′23″N, 121°44′44″W (36.956293, -121.745433)[1].

According to the United States Census Bureau, the CDP has a total area of 10.2 square miles (26.5 km²), of which, 9.7 square miles (25.0 km²) of it is land and 0.6 square miles (1.5 km²) of it (5.57%) is water.

As of the census[2] of 2000, there were 7,328 people, 1,684 households, and 1,433 families residing in the CDP. The population density was 758.0 people per square mile (292.6/km²). There were 1,736 housing units at an average density of 179.6/sq mi (69.3/km²). The racial makeup of the CDP was 51.88% White, 1.01% African American, 1.28% Native American, 5.59% Asian, 0.07% Pacific Islander, 34.98% from other races, and 5.19% from two or more races. Hispanic or Latino of any race were 62.10% of the population.

There were 1,684 households out of which 48.9% had children under the age of 18 living with them, 67.8% were married couples living together, 12.1% had a female householder with no husband present, and 14.9% were non-families. 10.3% of all households were made up of individuals and 4.9% had someone living alone who was 65 years of age or older. The average household size was 4.30 and the average family size was 4.44.

In the CDP the population was spread out with 32.3% under the age of 18, 11.7% from 18 to 24, 30.3% from 25 to 44, 18.0% from 45 to 64, and 7.6% who were 65 years of age or older. The median age was 29 years. For every 100 females there were 107.0 males. For every 100 females age 18 and over, there were 106.6 males.

The median income for a household in the CDP was $53,875, and the median income for a family was $50,756. Males had a median income of $25,644 versus $26,750 for females. The per capita income for the CDP was $13,791. About 6.6% of families and 8.0% of the population were below the poverty line, including 5.6% of those under age 18 and 5.8% of those age 65 or over.

In the state legislature Interlaken is located in the 15th Senate District, represented by Republican Abel Maldonado, and in the 28th Assembly District, represented by Democrat Anna M. Caballero. Federally, Interlaken is located in California's 17th congressional district, which has a Cook PVI of D +17[3] and is represented by Democrat Sam Farr.
