Hudsons Coffee was founded in 1998 by Ros Turner and Mark Hawthorne, after a conversation over coffee one day in Melbourne. Together they created Hudsons Coffee as a boutique coffeehouse, with an emphasis on quality, contemporary environment, and speed of service. To date Hudsons has 38 stores Australia wide.[1][2][3]

At present, Hudsons Coffee has stores in five Australian states: New South Wales, Queensland, South Australia, Tasmania, and Victoria.[4]

Breaking away from traditional strip mall coffee shops, Hudsons has set itself up in both the Melbourne Domestic and International Airports, with 2 stores in the Adelaide Airport as well, and plans to open up in the Brisbane airport as well in January 2008.

Hudsons also operates out of 4 hospitals around Australia, with plans to open another at the end of 2007.

Early on Hudsons introduced customer loyalty cards, where 10 cents from every dollar was registered on the cards. Customers who accrued enough points could use their cards to essentially trade their points in and buy a “free” beverage..

Money can also be put on the loyalty cards, and can be used to buy food and beverages in lieu of cash.

In 2002, several Melbourne based stores were introduced to a new touch screen system, where customers could swipe their card and place their order without having to wait in lines to be served. These orders are placed ahead of those ordering at the counters.

When signing up for the cards, customers are given the choice to be notifited of promotions via e-mail and SMS.

All Hudsons Coffee stores use a specially crafted medium-dark roasted bean for their espresso base, known simply as Hudsons Premium. Beans are shipped 2-3 times weekly to stores outside of Melbourne where the company who roasts the beans is located.

Customers are welcome to buy 200g bags of beans from retail outlet stores, or directly from the company website. Hudsons Coffee has approximately 12 types of coffee to choose from, ranging from light roasted, to the dark double roasted as well as flavoured beans, natural Swiss water processed decaf and certified organic fairtrade beans.

Hudsons Coffee stores serve a variety of products ranging from espresso based hot and cold beverages to sandwiches and panini.

Hudsons Coffee serves mostly espresso based beverages such as Cappuccino, Café Latte, Long and Short Macchiato, Long Black, Flat Whites, Choc Mocha, Marble Mocha as well as the well favoured Espresso. They do, however, also serve other hot beverages as well, such as Hot Chocolate, White Hot Chocolate, Chai tea and a variety of leaf tea’s from the Melbourne based Australian tea manufacturer T2.

Amongst their cold drinks are ice based fruit smoothies, iced coffee/chocolate/mocha, iced latte/chai, as well as their own version of an ice-blended coffee and mocha known as an Ice Storm (soon to be available in chocolate at some stores).

Sweet and savoury foods vary from store to store but some products are nationwide.
