What your watchlist shows is the name of the page, the amount of addition or subtraction to the article in the last change to that page, and the username of the party who made the change. Basically, they're more or less listed there so that you can know how the article was changed. Hitting the "(hist)" will let you see what the exact changes were, and also have a link to any earlier revisions which don't appear on your watchlist.
