Gillian Rolton (born May 3, 1956) is a former Olympics equestrian champion from Australia. She competed in two Olympic Games — 1992 Summer Olympics and 1996 Summer Olympics, Both times riding her horse, Peppermint Grove, named after Peppermint Grove in Western Australia.
She was one of the eight flag-bearers of the Olympic Flag at the opening ceremony of the 2000 Summer Olympics in Sydney, New South Wales, Australia.
