Gibbon is a city in Sibley County, Minnesota, United States. The population was 808 at the 2000 census.

According to the United States Census Bureau, the city has a total area of 0.9 square miles (2.3 km²), all of it land. The Middle Branch Rush River starts near Gaylord.

As of the census[1] of 2000, there were 808 people, 364 households, and 227 families residing in the city. The population density was 910.0 people per square mile (350.5/km²). There were 378 housing units at an average density of 425.7/sq mi (164.0/km²). The racial makeup of the city was 95.17% White, 0.74% Native American, 0.50% Asian, 3.09% from other races, and 0.50% from two or more races. Hispanic or Latino of any race were 3.84% of the population.
There were 364 households out of which 25.5% had children under the age of 18 living with them, 54.1% were married couples living together, 5.2% had a female householder with no husband present, and 37.6% were non-families. 34.3% of all households were made up of individuals and 20.6% had someone living alone who was 65 years of age or older. The average household size was 2.22 and the average family size was 2.88.
In the city the population was spread out with 24.3% under the age of 18, 5.9% from 18 to 24, 23.5% from 25 to 44, 19.4% from 45 to 64, and 26.9% who were 65 years of age or older. The median age was 43 years. For every 100 females there were 103.5 males. For every 100 females age 18 and over, there were 102.0 males.
The median income for a household in the city was $33,816, and the median income for a family was $38,977. Males had a median income of $30,625 versus $22,019 for females. The per capita income for the city was $17,897. About 3.6% of families and 7.4% of the population were below the poverty line, including 10.7% of those under age 18 and 8.0% of those age 65 or over.
