George W. Mathews was an Assistant Surgeon in the United States Army and a Medal of Honor recipient for his actions in the Philippine-American War.

Rank and organization: Assistant Surgeon, 36th Infantry, U.S. Volunteers. Place and date: Near Labo, Luzon, Philippine Islands, 29 October 1899. Entered service at: Worcester, Mass. Birth: Worcester, Mass. Date of issue: 14 March 1902.
Citation:
- While in attendance upon the wounded and under a severe fire from the enemy, seized a carbine and beat off an attack upon wounded officers and men under his charge.
