Fujio Shido

Fujio Shido (Shido Fujio 志度藤雄) was a renowned chef who played an important role in introducing French cuisine to Japan. He is widely held by the Japanese as Japan's pioneer of French Cuisine.
Once had a duty to the Japanese Embassy in London. After his duty had passed he went on to cook.
During the war he returned to the Maison Cid(?) He cooked for the prime minister of Japan.
He also made a reputation for himself as a chef in restaurants such as Hananoki and Four Seasons.
Was Iron Chef French Hiroyuki Sakai's mentor for three years.
