Floating island (dessert)

A floating island (French: île flottante or oeufs à la neige) is a French dessert consisting of an "island" of meringue floating in a "sea" of Crème anglaise. In Austrian cuisine a similar recipe is known as schneenockerln, and it is also popular in the Southeastern Europe, under the name šnenokle. It is prepared from whipped egg whites, whose chunks are briefly cooked, and then scuttled into vanilla-flavored custard cream.
