ΔK = KnowledgefKnowledge0; or replace Knowledge (K) with experience, etc.

I would define Learning (L) as the process of acquiring knowledge over time: \frac{\Delta K}{\Delta t} or \lim_{\Delta t \rightarrow \infty} \frac{\Delta K}{\Delta t} = \frac{dK}{dt}.

So ΔL (not simply L), or the time derivative of L, \frac{dL}{dt}, would be the speed of learning, or the "acceleration" of knowledge, \frac{d^2K}{dt^2}..

So ΔL is therefore how quickly one learns.
